I love having healthy meals that are filling and full of flavor. Here is one we had this week that made me happy just looking at it.
Okay, I wasn't satisfied just looking at it, but you know what I mean.
On this menu:
Chipotle marinated and grilled chicken breast
Caribbean spiced black beans
Corn on the cob with chipotle yogurt dip (instead of butter)
Fresh fruit salad
Yum!
